     Stuffed dates are a great make ahead dish.  I pick up packs of dried dates whenever I get a coupon.  I vary my fillings.  For this recipe, we will focus on goat cheese.  It’s easily available and can be mixed with other ingredients easily enough.

     I suggest cutting your bacon while it is almost frozen.  It will cut cleanly.  Wait until your bacon has come to room temp before working with it.  It’s much easier to get a cleaner wrap and finish if the bacon is at room temperature.  A spoon or piping bag can make quick work of filling your dates.  As for working with dried dates, you can soak them for a few hours in warm water, or alcohol.  Alcohol such as Port wine or rum may be used.  Although, fresh dates would be much easier to work with.

Instructions
  1. Make a lengthwise shallow slice along the length of the date. Slightly open the date to remove the pit. Repeat this process to remove the remainder of the pits.
  2. Spoon or pipe a small amount of cheese into the date. Think about the size of the pit when filling. Repeat for all of the dates.
  3. Take a piece of your room temperature bacon and set it on your cutting board.
  4. Set a date on the piece of bacon and slowly stretch and smooth the bacon as you roll the date to get a clean wrap. Skewer with a pick and set aside. Repeat this step for all your dates.
  5. Arrange your dates on a baking sheet and bake at 400 degrees for 10-15 minutes. Place under broiler to reach desired level of crisping to the bacon.
  6. Large batches intended for later use should be IQF ideally. Arrange uncooked pieces on a baking sheet and freeze solid overnight before packing in a container.
